This may look like a concoction, but trust me,
Harvesters has the best recipes. It was protein week for the after-school neighborhood program, Harvesters' Kids in the Kitchen (I was the aide). The featured recipe was a healthy alternative to tacos made with meat. In the lesson part of the hour, the kids learned the difference between a seed, a kidney bean, a pistachio, a navy bean, a chickpea, a split pea, a lima bean, a black bean and other forms of protein that could fit loosely in a sandwich size ziploc bag. The 2nd half hour, they diced tomatoes and onions and stirred the rest of the ingredients in a skillet for their taco tasting. Toppings of cheese, sour cream, and salsa were served on the side. The kids received a certificate for participating in 4 weeks of cooking classes and were given the famed Harvesters folder-bound cookbook. As a thank you for helping, I graciously accepted one, too.
